The Nutty Brownie Caramel Cup

I‘ve always been a chocolate fiend, so naturally I’m a huge fan of brownies. But not just any brownies. They have to be rich, gooey and not too sweet. And the darker the chocolate, the better. I mean, who could resist?
While I’ve had some good brownies, my favorite ones are from Little Red Kitchen Bake Shop. Susan, the owner, and I started our businesses around the same time and have been each other’s support system from the start. We’ve also shared a kitchen space from the beginning, first as part of a food incubator and now in a kitchen that’s just for Jessie’s Nutty Cups and Little Red Kitchen. (Yes, I’ve had the pleasure of trying all of her incredible baked goods, which is how I discovered my very favorite brownie!)
Susan has always shared her “extra” brownie edges with our team (although I’m pretty sure I ate most of them myself… again, SO GOOD!). One day, we had the idea to combine Little Red Kitchen’s brownie edges and Jessie’s homemade peanut butter in a Belgian milk chocolate shell. What could be more delicious? Just one thing: adding caramel to the mix.
Little Red Kitchen and Jessie’s have collaborated on a few treats in the past, but I think the Nutty Brownie Caramel Cup is my favorite of them all. And it didn’t take much experimenting to get this one right. Pro tip: It helps when you have an incredible baker to supply you with the best brownies out there!
